PIO CESARE Gavi di Gavi - Sourced on the hillside vineyards in very special locations of the Gavi area. These areas are belonging to families who have been producing their grapes for Pio Cesare for generations. Comprising of a fruity minerality, bright acidity, good mineral backbone and supported by a discernable mid-palate.
Colour; Clear straw yellow with green reflections Nose; Ever so slightly aromatic with a clean spicy notes Food Match; Best with shellfish Vinification; Slow fermentation at a low temperature in stainless tanks on the lees for four months. The wine is kept in stainless steel tanks at this stable low temperatures until following March after the harvest when it is bottled Ageing; This wine is designed to be consumed young but can age in the bottle for up to 3 years
