MONTE ROSSA Cabochon - This is a very harmonious, elegant and persistent wine having a well defined and rich personality making it an unmistakable wine. The Cabochon is the most prestigious wine from Monterossa. Soft, full and very persistent, the resulting taste is complex with hints of tobacco and spices. It is yeasty, elegant, tart with a citrusy round acidity and mineral palate.
Colour; Brilliant yellow with gold reflections and a fine mousse Nose; Broad and intense aromas of toasted hazelnut, coffee, pineapple syrup and candied fruit, with a spicy and mineral closure Food Match; With appetisers, cold meats, quiches, shellfish on broth and sorbets Vinification; Soft pressing of grapes selecting the best results in 58% of yield. Each cru is vinified in purity. Fermentation takes place in in oak shavings. Rests in bottle for a minimum of 40 months Ageing; 10 - 15 years
